Here at Be More With Less, topics are usually about less. Today, you get to hear about MORE! Bill Gerlach, from The New Pursuit reminded me that October is Vegetarian Awareness Month.
There are many meat substitutes and endless choices of fresh flavorful fruits and vegetables, that a transition to vegetarianism is easier than you think.
There is much to be said about a vegetarian diet in terms of health benefits (for humans and animals). I wrote about why I became a vegetarian and what compels me to stick with it here.

If you are considering vegetarianism, instead of initially eliminating meat, think about adding more veggies. Carrot sticks and celery have their place, but they get old fast, so get creative. What ideas would you add to this list?

Thanks Courtney, I love finding exciting lists of veggie foods for inspiration. My diet needs a little spicing up so I’m open to new ideas. Mashed potato pizza sounds like dinner tonight!! Yum.

Awesome list! And a great way to add variety to your diet. That’s the number one key to successful full-time vegetarian eating. My favorites from your list: Pretty much all of them — especially when we grow a bunch of those things in our garden!

As a veggie mama, this post makes me smile immensely. You would not believe the number of people who tried to convince me that as a pregnant/nursing mother, vegetarianism was not an option for me. Some people went so far as to tell me I was hurting my child by pursuing a meat free diet.
I plan on raising my son as a vegetarian, and your list gave me lots of good ideas to spice up our menu. My favorite veggie dish is lentil/vegetable tacos and my famous lentils and pasta with cumin collard greens.
I would love your recipe for humus if you’re willing to share it. I haven’t been able to find a recipe that I like as of yet and I’m always on the look out for good ones.

Yeah you are right, I eat less fruits and that is not so good!
